Corn and Cheese Casserole From: Kelly~WA Yield: 6 Servings
3 cups cooked rice -- brown or white 1/2 tsp salt 1/2 tsp chili powder 2 cups corn kernels 1/2 tsp black pepper -- ground 1 small onion -- chopped fine paprika 2 cups sharp cheddar -- grated 1 1/2 cups whole milk
Preheat the oven to 350 degrees. Combine all the ingredients except the paprika in a large mixing bowl. Blend thoroughly. Pour into a well greased (2 quart) casserole dish. Sprinkle with paprika. Bake 40 to 45 minutes. Serve hot
