Salmon Cakes
1 (15 1/2 oz) can salmon, drained and flaked 1 beaten egg 1/3 cup buttermilk 1/3 cup finely ch onion 1/3 cup cornmeal or bread crumbs Salt and pepper to taste 1/4 tsp baking soda Vegetable oil
Mix all ingredients except oil-shape into six patties.
Heat oil 1 1/2 to 2 inches in heavy skillet until hot-fry patties about 10 minutes, turing once until golden brown. Drain.
Yield: 6 patties
