2 packages fast-acting dry yeast 2 cups warm water (105-115 degrees) -- (about 110 degrees) 2 tablespoons sugar 1/4 cup olive oil 1/4 cup salad oil 1 teaspoon salt 5 1/2 cups unbleached flour
Topping: 3 fresh garlic cloves, crushed 1/4 cup olive oil 3 teaspoons dried rosemary 3 teaspoons kosher salt
Dissolve the yeast in the warm water. Add sugar, 4 tablespoons olive oil, salad oil and 1 teaspoon regular salt. Mix in 3 cups flour and whip until dough begins to leave sides of the mixing bowl, about 10 minutes.
Mix in the remaining flour and knead until dough is smooth.
Allow dough to rise twice, punch down after each rising.
Oil 2-11 x 17 baking sheets and divide the dough between the two pans. Using your fingers press the dough out to the edges of each pan. Allow to rise, covered, for 30 minutes and brush with crushed garlic and 1/4 cup olive oil mixture. Sprinkle on kosher salt and rosemary.
Bake in a preheated 375 degree oven for 30 minutes.
