Spring Lettuce Salad Tossed in a Red Balsamic Vinagrette alt.cooking-chien/VeeDeena (1999)
1 head romaine lettuce, green leaf 1 head or red leaf romaine 1 zucchini, diced 1 summer squash, diced 1 cucumber, diced 3 tomatoes, sliced
1/2 cup red balsamic vinegar 1/4 cup extra virgin olive oil 1/2 cup fresh basil, chopped
1 (8 oz) pkg. feta cheese, crumbled 1/2 cup shredded parmesan cheese 1 cup croutons (homemade preferably)
Tear lettuce into bite size pieces. Mix lettuces together. Add rest of the vegetables and toss well.
Make the vinaigrette by mixing the oil, vinegar and basil together. Pour over salad and add both cheeses, croutons, and fresh cracked black pepper.
