Jam Gems

2 cups flour
2 tbsp. sugar
3 tsp. baking powder
1 tsp. salt

Sift together.

1/3 cup cooking oil
2/3 cup milk

Pour into one measuring cup but don't stir.

Pour all at once into flour. Stir with fork until mixture comes away from the bowl and rounds into a ball. Fill greased muffin cups 2/3 full. Make a small indentation in the top and fill with raspberry jam. Bake 8-12 minutes. While still warm, frost with icing below.

Icing: (will be thin)

Mix together
1/2 cup confectionery sugar
1 tbsp. milk
a few drops of lemon juice
