Chocolate Chipper Cake rec.food.cooking/Mary Ash (1996) From: Microwave Times Serves 8
I made this for dessert last night and by bedtime there wasn't a piece left. Also, you can omit the dates, just reduce the heating time for the water to 1 to 1 1/2 minutes.
1/2 cup water 1/2 cup chopped dates 1/2 teaspoon baking soda 1/3 cup vegetable oil 3/4 cup sugar 1 egg 1/2 teaspoon vanilla 1 cup flour 1 tablespoon cocoa 1/4 teaspoon salt 1/2 cup semi-sweet or milk chocolate chips 1/4 cup chopped nuts
Heat water on High for 2 to 2 1/2 minutes in microwave oven. Add baking soda. Let cool 5 minutes.
In Mix-N-Pour bowl or large mixing bowl, blend together oil and sugar. Beat in egg and vanilla.
Stir in warm date mixture. Add flour, cocoa, salt. Mix until just smooth.
Lightly grease a 9-inch glass cake pan. Pour batter into pan and microwave at 50% (Medium) for 7 to 8 minutes.
Top with chocolate chips and nuts. Microwave on High for 2 to 3 minutes or until center is set. Serve warm or cold.
