Low Fat Microwave Cake (using cake mix) Yield: 12 Servings
Here is a microwave cake that is reduced fat, easy to fix, and looks great! This takes only about 15 minutes to fix from start to finish so its great for last minute company or a sweet tooth that is really getting the best of you. Enjoy!!!
1 Box Betty Crocker Super Moist Cake Mix (Yellow or White) 1 cup Water 1/3 cup Fat Free mayonnaise 3 Egg whites Mix all ingredients. Place in microwave save bundt cake-type pan. Microwave on high for 3 minutes, rotate 1/3 turn microwave another 3 minutes, rotate 1/3 turn microwave final 3 minutes. Cake should pull away from sides slightly. If not then microwave for 1 minute increments until done. Cool for 4-5 minutes. Invert on plate and gently shake to loosen all the way round then remove pan.
Topping: Place 1/4-1/2 cup jelly, preserves, or fruit spread in a microwave safe bowl. Microwave full power for 1-2 minutes until bubbly and lumps are gone. Drizzle over cake and allow to cool.
