Southern Banana-Pineapple Cake with Cream Cheese Glaze (microwave) rec.food.recipes/Robert & Keri Cathey (2000)
1 1/2 cup flour 1 cup sugar or 1/2 cup honey 1/2 tsp. salt 1/2 tsp. baking soda 1/2 tsp. cinnamon 2 eggs 1/2 cup oil 3/4 tsp. vanilla 1 (6 oz.) can crushed pineapple 1/2 cup pecans or walnuts 1 cup chopped banana
Cream Cheese Glaze: 1 (3 oz.) pkg. cream cheese 1/2 cup powdered sugar 3 Tbsp butter 1 tsp. vanilla 1 1/2 Tbsp milk
In large bowl mix flour, sugar or honey, salt, baking soda and cinnamon. In a small bowl, beat eggs and oil well with mixer. Pour two mixtures together and with a spoon stir until moist. Stir in vanilla, pineapple, nuts and bananas. Spoon into greased 16 cup microwave ring mold. Microwave at high for 9 to 12 minutes. Rotate cake 1/4 turn every 3 minutes. Invert 5 minutes after done.
Cream Cheese Glaze: In a small bowl place cheese, microwave on high 1/4 to 1/2 minute. Add powdered sugar, butter, milk and vanilla. Beat until smooth. Frost cake.
