Toffee rec.food.cooking/Rich Byrnes (1997)
Here is an AWESOME toffee recipe I got from my Grandma years and years ago and make tons of it every Xmas, and it always gets RAVE reviews.
1 lb butter (2 cups) 2 cups firmly packed brown sugar 1 bag chocolate chips (your choice, dark, milk, etc.....) 1 cup finely chopped almonds (or whatever nut you fancy)
Melt butter and brown sugar together over medium heat, stirring constantly until it reaches 300F (Hard Crack stage)
Pour into cookie pan that's been foiled and buttered.
Sprinkle chocolate chips (original recipe called for Hershey bars, but I've experimented with many different chocolate chips) over top and spread with spatula as they melt. Press finely chopped almonds into the chocolate before it cools. I usually stick it in the freezer until firmly set and then break into pieces. I've also cut with a pizza cutter before it sets to make the pieces uniform when I break it.
