Banana Oatmeal Bread rec.food.recipes/Barbara Ballard (1996) From: Bread Machine Baking by Lora Brody & Millie Apter
1/4 cup water 1 extra large egg 2 Tbsp vegetable oil 1 cup mashed very ripe bananas 3 Tbsp brown sugar 1 1/2 teaspoons salt 4 Tbsp powdered buttermilk 1 cup quick cooking oats 2 1/2 cups unbleached white flour 1/3 cup steel-cut oats, soaked in 1/3 cup boiling water until the mixture is at room temp 2 tsp yeast
Program machine for bread or white bread.
I usually add 3 tsp of vital wheat gluten to this recipe it improves the texture and ability of the bread to rise.
