Wedding Finger Sandwich Rolls rec.food.recipes/Diane M. Ferrell (1996)
These finger sandwiches that could be frozen in advance. To make them different or attractive have bakery that makes pullman loaves make them in the colors of the wedding. However, I must caution, plain blue bread leaves much to be desired in presentation, unless it is a color that is very different from the color of bread mold.
Have the loaves sliced lengthwise. You should get about 5 slices.
With a heavy rolling pin, press the slice as thin as possible. Trim the crust and ragged edges with a sharp knife. Spread your favorite filling (or see the following fillings) and roll up as for a jelly roll. Slice into 5 rolls. They make a very pretty and tasty presentation.
Walnut Cream Cheese Filling: 8 oz cream cheese, room temperature 1 stick butter, softened 1 tbsp sugar 2-3 tbsp walnuts, very small pieces
Whip the cream cheese and butter together. Mix in the sugar and walnuts well. Spread on the bread about 1/4-inch thick.
You can add well drained crushed pineapple as a variation on this.
Ham Salad Filling: 1 lbs boneless, lean cooked ham 4 tbsp mayonaise 2 hard boiled eggs 3 ribs of celery, minced 1 small can of chopped olives
Process the ham, mayonaise, and hard boiled eggs in a food processor until pureed. Add the olives and celery and mix well.
Variation is to use boneless, boiled chicken breast. Remove the skin. |
