Red, White and Blue Cheesecake

This is a really vibrant dessert for the 4th of July. It's from Eli's Catering in New York.

2 lbs. cream cheese
1 cup sugar
1 Tbsp. flour
1/8 tsp. salt
5 eggs
1 cup sour cream
Combine in a mixer to make the basic batter.

1 (16 oz) can cherries, drained
1 (16 oz) can cherry pie filling
1 (16 oz) can blueberries, drained
2 Tbsp. each red and blue professional food paste
1 tsp. vanilla

1 graham-cracker or chocolate wafer cookie crust pressed into the bottom and sides of a springform pan. Baked for 10 minutes at 350 (or according to crust recipe)

MIx batter and divide into thirds. Mix vanilla into 1 of the thirds. Mix blueberries and blue food color into another third. Pour into crust.

Freeze for 40 minutes. Meanwhile, refrigerate the vanilla third. Add the can of cherries and red coloring to the last third of batter. Refrigerate this, too. When the blue layer is firm, remove from freezer and add vanilla layer. Freeze till firm, about 1/2 hour. Add red layer when blue is firm.

Bake at 300 till firm when jiggled, about 50 minutes; cool and refrigerate.

Top with can of cherry pie filling.
