Duchess Meatballs From: Family Circle Hamburger Cookbook. Servings: 4
"Simple to make--but with a complicated set of flavors."
1 lb. ground beef 1 egg 1/4 cup milk 1/2 cup soft bread crumbs (1 slice) 1/2 cup chopped pecans 2 Tbsp. chopped fresh parsley 1/2 tsp. salt Dash of pepper 2 Tbsp. butter or margarine 1 can (10 3/4 oz.) condensed tomato soup Seasoned hot mashed potatoes
1.Mix ground beef lightly with egg, milk, bread crumbs, pecans, parsley, salt and pepper till well blended, shape into 24 balls.
2.Brown in butter or margarine in a large frying pan, stir in tomato soup, cover.
3.Simmer, stirring several times,10 minutes to blend flavors.
4.Spoon seasoned hot mashed potatoes in a ring on a serving plate, spoon meatballs and sauce in center.
