Vegetable Medley Serves:4
2 Tbls. olive oil 1 small garlic clove, crushed 1/2 cup chopped green pepper 1/2 cup chopped onion 2 cups sliced yellow squash 1 cup cut green beans 1 cup whole kernel corn 1 tsp. salt 1/2-1 tsp. chili powder 1 Tbls. lemon juice Freshly ground pepper to taste
Heat olive oil in a 1 1/2 quart saucepan. Add the garlic, green pepper and onion, saute for 5 minutes.
Add the squash, green beans and corn. Cover the pan with a lid and cook over low heat for 20-25 minutes or till veggies are tender. Add salt, chili powder, lemon juice and pepper.
