Tortilla Flats Source: Lawry's Calif. Center
2 tbsp sugar 1 tsp ground cinnamon 1 wheat flour tortilla; see * veg. oil; (for frying) 1 tbsp butter; melted 1 scoop vanilla ice cream strawberries; sliced or fresh peaches; sliced 1 tbsp slivered almonds; toasted
*Please note: Cornmeal tortillas CAN'T be substituted because they do not take on the texture of pastry when fried.
Combine sugar and cinnamon and reserve. Heat oil in a skillet and fry tortilla on both sides until golden brown and puffy. Drain on a paper towel. Brush tortilla with melted butter, and sprinkle with cinnamon sugar. Top with ice cream and garnish with fruit and nuts. Serves 1.
