This is a very old recipe, coming from my grandmother. It uses pearl tapioca rather than the granulated. I LOVE these kinds of puddings -- pure comfort to me! Enjoy!!
“FRESHMAN’S TEARS” TAPIOCA PUDDING
1/4 C pearl tapioca 1 cup water 1/8 t. salt 3 eggs, separated 3 1/2 cups scalded milk 2 T cornstarch 1/2 cup sugar 1 t vanilla
Soak pearl tapioca in 1 cup hot water and salt til softened - couple of hours. Then cook in top of double boiler til tapioca is transparent. Beat yolks, add milk and combine with tapioca. Mix cornstarch and sugar and add. Return to double boiler and cook until thick and creamy, about 15 minutes.
Just before serving, beat whites stiff and fold into pudding. Add vanilla. Serve cold. Serves 8.
