Coconut Pumpkin Pie
rec.food.cooking/Rich Bails (1995)
Makes 1 pie

1 stick (1/2 cup) softened margarine
2 cups sugar
3 tablespoons flour
2 eggs
1 small can condensed milk
1 cup pumpkin puree
1 teaspoon vanilla extract
1 cup flaked coconut

Preheat oven to 400 degrees. Cream together margarine and sugar. Beat in eggs. Add remaining ingredients, blending after each addition. Pour into unbaked deep dish pie crust. Bake for 10 minutes. Turn temperature back to 300 degrees and bake for about 50 minutes, or until a tester inserted in center comes out clean.
