Turkey with Herbed Rice This flavorful mixture is a lovely dish that makes great use out of leftovers. Serving: 6
3/4 cup turkey stock 1/2 cup sliced mushrooms 1 cup chopped onion 2 sliced carrots 1 cup chopped bell pepper 4 teaspoons freshly minced parsley 4 teaspoons fresh snipped chives 1/2 teaspoon dried red pepper flakes or to taste 1 tablespoon freshly minced marjoram 3/4 cup dry white wine 3/4 cup brown rice 1/4 pound snow peas 3 cups cubed cooked turkey
Mix all of the ingredients except for the peas and turkey in a large saucepan. Bring to a boil, cover, and reduce heat. Simmer for about 20 minutes, or until rice is almost done. Add turkey and peas and simmer covered 5 minutes more.
