Turkey With Almonds Serving: Serves: 6
3 tablespoon slivered almonds 2 cups thinly sliced onion 2 tablespoons margarine 2 tablespoons olive oil 1/4 teaspoon cardamom 1/2 teaspoon coriander 1 teaspoon salt 1/3 cup dry sherry 1/4 cup raisins 3 cups diced cooked turkey breast 1/4 cup chopped parsley
Brown almond slivers in a toaster oven and set aside. Watch them carefully to they burn quickly. In a large skillet or wok, sauté onion in margarine and olive oil until tender. Stir in cardamom, coriander, salt, sherry, and raisins. Cook until all excess liquid evaporates. Stir in turkey, parsley, and almonds and heat through.
