Cranberry Casserole rec.food.cooking/Nancree (2001)
3 cups chopped unpeeled apples 2 cups raw cranberries* 1 1/4 cups sugar 1 1/2 cups uncooked quick-cooking oats 1/2 cup packed brown sugar 1/3 cup all-purpose flour 1/3 cup chopped pecans 1/2 cup melted margarine
Preheat oven to 350 degrees.
Combine apples, cranberries and sugar in 2-quart casserole. In a separate bowl, combine oats, brown sugar, flour, pecans and margarine.
Top fruit mixture with oat mixture. Bake 1 hour or until bubbly and light brown.
Serve hot with turkey or ham, or as a dessert with vanilla ice cream.
*I used dried cranberries, soaked in warm water, instead of fresh--and they were just fine. I "may" have put a bit of cornstarch in with the apples and cranberries.
The taste was wonderful--not too sweet, or tart. It could be used either as part of the main meal, or afterward.
