Citrus Pie Bars rec.food.recipes/Janie McKinney (1997) Source: Favorite Recipes, Land O Lakes Cookie Collection Makes about 2 dozen bars
Crust: 1 cup all-purpose flour 1/4 cup sugar 1/3 cup butter, softened 1/4 teaspoon ground cardamom OR mace
Filling: 1/2 cup sugar 1/2 cup flaked coconut 2 eggs 2 tablespoons all-purpose flour 1/2 teaspoon baking powder 1/8 teaspoon salt 2 tablespoons grated lemon or orange peel 2 tablespoons lemon juice
Heat oven to 350 degrees F. For crust, in small mixer bowl, combine all crust ingredients. Beat at low speed, scraping bowl often, until particles are fine, 1 to 2 minutes. Press on bottom of ungreased 8-inch square baking pan. Bake for 12 to 17 minutes, or until edges are lightly browned.
For filling, in same mixer bowl, combine all filling ingredients. Beat at medium sped, scraping bowl often, until well mixed, 1 to 2 minutes. Pour over hot crust. Continue baking for 15 to 20 minutes, or until edges are lightly browned. Cool completely. Cut into bars.
