Hot Sauce for Wings
Rec.food.recipes/Nicole Schultheis 2002

1 stick (4 oz or 110g) unsalted butter
1 cup hot sauce
2-3 cloves garlic, sliced finely or minced
2-4 Tablespoons ketchup
2 anchovies, smashed, or a good squeeze of anchovy paste

Mix all in a saucepan, heat to the boil and simmer a few minutes. Remove from heat. Use to coat pre-fried chicken wings before reheating and on a baking tray in a moderately hot oven. Or use the same sauce to coat pre-fried thighs and finish the same way. Sauce will probably coat about 5-8 lbs (up to about 3.5 kilos) thighs, less if using and wings.
