Herbed Mini Meat Loaves (microwave) alt.cooking-chien/Traci and Jeff Poole (2000) Yield: 6 Servings
1 lb ground beef, lean 1 cup bread crumbs, soft 1 egg 1 garlic clove; minced 1/4 cup parsley; chopped 1/2 tsp oregano, dried 1/2 tsp basil, dried 1/4 tsp pepper, black 8 oz tomato sauce
Use half of the tomato sauce and add all the other ingredients. Mix well, and form into six balls. Place the balls in a microwave-safe muffin pan. Micro-cook at 70% (MEDIUM-HIGH) for 11 to 13 minutes, rotating the pan every four minutes.
Drizzle with the remaining tomato sauce. Let stand for five to ten minutes before serving.
Serve with mashed potatoes, carrots and spinach.
