Skillet Meat Loaves rec.crafts.textiles.needlework/Kathy K (KTortue) (1999)
Here's the recipe I got from my mom. It's great in the summer because it cooks on top of the stove--no need to heat up the oven.
1/3 cup fine dry bread crumbs 2 pounds lean ground beef 1 tablespoon instant minced onion 1 egg, slightly beaten 1 teaspoon salt 1/2 teaspoon seasoned salt 2 tablespoons butter or margarine 1/4 cup cider vinegar 3 tablespoons light brown sugar 6 whole cloves 2 bay leaves Few drops gravy seasoning-browning mix 1 tablespoon flour
Add meat, crumbs, onion, egg, salt, and seasoned salt and mix well. Shape in 2 loaves and brown on both sides in the butter in skillet.
Combine 1 cup water and remaining ingredients, except flour, and add to meat loaves. Bring to boil, cover and simmer, basting several times with liquid in skillet and turning once, about 1 hour.
Remove bay leaves, skim fat from liquid and thicken liquid with the flour mixed with a little water. Simmer a few minutes, adding a little more water if necessary. Strain and pour over sliced meat.
We make it with extra-lean ground beef and it makes a very solid loaf--it's not as good with fattier hamburger. Good cold in sandwiches too.
