HOT & SPICY PORK TENDERLOIN
Place a pork tenderloin (seasoned with salt and pepper of course) in a baking dish sprayed with cooking spray. Cover the pork with about 1/2 cup of hot pepper jelly. Bake at 400 degrees for 45 minutes or until pork is tender. Let rest 5 minutes before slicing. Use the juices from the pan as a sauce to pour over the sliced pork.
