Basic Yellow Rice (Arroz Amarillo Basico)

2 tablespoons annatto oil combined with 1 tablespoon corn oil
2 1/2 cups rice
3 to 31/2 cups boiling water or chicken stock
2 teaspoons salt

Heat the oil in a saucepan with a tight-fitting lid. Add the rice and stir to combine. Stir in the boiling liquid and salt. Bring to a boil, reduce the heat to a simmer, and cook until the liquid evaporates. Cover and cook over very low heat for 20 minutes without stirring.
