Aromatic Rice, Beans, and Greens Source: Vegetarian Times Servings: 4 (1 cup) servings
3 cups water 2 cups chopped kale or spinach, packed 1 1/2 cups jasmine rice or basmati rice 1/2 teaspoon freshly ground black pepper 1/4 teaspoon garlic powder red pepper flakes, to taste 1 (15 ounce) can red kidney beans, drained 1/4 cup chopped fresh parsley
Combine water, kale or spinach, rice and dried seasonings in a medium saucepan. Bring to simmer over medium-high heat. Stir once, cover, and cook over medium-low heat about 15 minutes. Stir in beans and parsley. Fluff rice with fork; turn off heat. Let stand for 5 to 10 minutes before serving.
