Bruschetta Burgers Usenet/John McEnery (2002) (4 servings)
1 tbsp plus 1 tsp of olive oil 1 tsp of minced garlic 4 crusty hamburger rolls, halved 1 (4 oz) bunch of scallions, trimmed 1/8 tsp salt 2 tsp chopped fresh thyme or 1/2 tsp dried 1/2 tsp freshly cracked black pepper 1 pound of lean ground beef 8 slices of ripe tomato 1/2 cup of feta or crumbled goat cheese
Mix olive oil, garlic & brush over the cut sides of the rolls and grill, cut side down, until roasted (about 30 seconds) and remove to a serving plate
Grill the scallions 2 minutes per side until lightly charred and cut each in half, crossways.
Mix the salt, thyme and pepper, shape the beef into 4 patties and sprinkle with mixture.
Grill the burgers for 2 to 3 minutes per side for medium.
Put 2 slices of tomato and some scallion pieces on the bottom of each roll, top with a burger and cheese and remaining scallion pieces and cover with roll tops.
