Vegetarian Rolls Source: Gisele Aylmer, Quebec, Canada Servings: 8
1 3/4 cup [440 mL] canned chick peas, rinsed and drained 2 teaspoons [10 mL] vegetable oil 1 medium-size onion, chopped 1 garlic clove, minced 1 cup [250 mL] green pepper, chopped 1 3/4 cup [440 mL] canned tomato sauce 1/4 cup [60 mL] cider vinegar 2 tablespoons [30 mL] tomato paste 2 tablespoons [30 mL] packed brown sugar 1 tablespoon [15 mL] chili powder Pinch of Cayenne pepper 8 hamburger buns
Grossly chop chick peas in a food processor; reserve. In a large frypan, in hot oil, brown chopped onion, minced garlic and chopped green pepper for 3 to 5 minutes, stirring often.
Mix in reserved chick peas, tomato sauce, cider vinegar, tomato paste, brown sugar, chili powder and Cayenne pepper. Cook for 9 to 15 minutes, until thickened, stirring from time to time. Stuff hamburger buns with mixture and serve immediately. |
