Pizza Submarine
1 loaf French bread, sliced lengthwise 1/2 pound ground beef 1/4 cup chopped ripe olives 1/8 tsp. pepper 3/4 tsp. salt 1/4 tsp. crushed oregano 1-1/2 tsp. chopped chives or finely diced onion 1/4 cup grated Parmesan or Romano cheese 1 can (6 oz.) tomato paste 6 slices (1 oz. ea.) Mozzerella cheese
Split French bread into halves, horizontally. Combine beef, olives, pepper, salt, oregano, chives, Romano cheese and tomato paste. Spread 1/2 of mixture over each cut side of the two bread halves. Place loaves, meat side up, on a cookie sheet and bake at 350 deg. for 25 min. Remove from oven. Cut cheese slices in half, diagonally. Slightly overlap 6 cheese triangles on each half loaf. Return to oven until cheese starts to soften. Cut each loaf crosswise into serving size portions. Note: I usually brown and crumble the beef before mixing with the other topping ingredients and can cut down on the baking time until just heated through-this keeps the bread a little softer.
