BACALAITOS FRITOS (Salt Codfish Cakes) Serves about 24 Bacalaitos. Puerto Rican recipe.
1/2 lb salt codfish 2 cups all purpose flour 2 tsp baking powder 1 garlic clove crushed 1 cup water 1 tb annatto oil vegetable oil for frying
Soak the codfish in water for at least 6 hours, changing frequently the water. Change the water & boil for approximately 5 minutes. Drain. Remove any skin & bones & shred. Sift the flour & baking powder in large bowl. Add the garlic, water & annatto oil & mix to a smooth batter. Add the shredded codfish & mix well. Heat the oil & fry the mixture by tb. Until golden brown. Drain on paper towels & serve.
