BARBADOS SALTFISH CAKES
1 lb salt codfish 1 lb pumpkin 1 tb unsalted butter 2 eggs lightly beaten salt & pepper to taste 1-2 cups freshly made breadcrumbs 4 tb vegetable oil
Desalt the codfish according to the process previously mentioned (soaked in water for at least 6 hours, changing the water frequently). Simmer for about 15 minutes. Drain & clean of bones and skin. Peel the pumpkin & boil. Drain & mash with the butter. Add the codfish. Beat in the eggs & correct the seasonings. Stir in the breadcrumbs until the mixture is firm enough to form cakes. Form into 12 cakes & roll the cakes in the breadcrumbs. Heat the oil & fry the cakes, browning on both sides. Drain on paper towels & serve as first course. If you make the mixture into small balls & fry them you can serve them as appetizers.
