Pilgrim Turkey Loaf (using stuffing mix) rec.food.recipes/Paul Royko (1997)
1 cup herb-seasoned stuffing mix 1/2 cup milk 1 egg 1 small onion, chopped 1 rib celery, chopped 2 Tbsp chopped parsley 1 tsp poultry seasoning 3/4 tsp salt 1/4 tsp pepper 1-1/2 lbs ground turkey cranberry sauce (optional)
Preheat oven to 375F.
In a bowl, blend together stuffing mix, milk and egg; let stand 5 minutes. Stir in onion, celery, parsley, poultry seasoning, salt and pepper. Add ground turkey and mix until well blended.
Pack mixture into a 4-inch by 8-inch loaf pan. Place on a baking sheet and bake until a meat thermometer inserted in the center of the loaf reads 180F, about 1 hour. Let stand 10 minutes before serving. Serve with cranberry sauce if desired.
