Oven Chicken Breasts Over Linguine and Broccoli rec.food.cooking/Carol Alvin (1995)
2 boneless chicken breast halves 1 large onion, thinly sliced 2 cloves garlic, thinly sliced 2 tbsp. olive oil 1 tbsp. basil 1/2 lb broccoli flowerets, steamed 6 oz. cooked linguine 1 orange Parmesan cheese (optional)
Combine onion, garlic, basil and olive oil in 9x13-inch baking pan. Roll the chicken breasts in the onion mixture.
Bake at 350 degrees for 45 minutes, or until onions are brown and chicken is tender.
Remove chicken from pan and set aside.
Add cooked linguine and broccoli to pan. Scrape up onions, etc and mix into linguine. Squeeze juice from orange over linguine. Serve linguine with the chicken breasts and top with Parmesan.
