We call this "MIRACLE CHICKEN" rec.food.cooking/MyAuntie (1996)
Put 4-5 boneless chicken breasts into the crock pot.
Pour in a jar of your favorite salsa (I use Del Monte, *hot*)
Cook for at least 7 hours.
About 30 min. before you want to serve, shred the chicken and put it back in the crock pot while you prepare the rest of your meal; that way the liquid soaks into the shredded chicken so it's not so watery.
You can then use the chicken for soft tacos, hard tacos, chicken enchiladas, tostadas, etc. etc. etc.
