Chicken Fried Rice rec.food.recipes/The Jain Family (Giselle) (2001)
2 teaspoons vegetable oil, divided 2 eggs, beaten 3 green onions, chopped 1/2 pound chicken breasts, boned, skinned and thinly sliced 1 tablespoon fresh ginger, minced 1/4 teaspoon crushed red pepper 3 cups cooked white rice 1 bunch broccoli flowerets 1/2 pound carrots, sliced 1/2 cup chicken broth 3 tablespoons soy sauce
Cook eggs in 1 teaspoon of oil and cut into thin strips, or scramble very fine. Saute onions, chicken, ginger and red pepper in remaining oil for 4 minutes. Add rice and cook for 1 minute. Add remaining ingredients, reduce heat, cover and cook 5 - 8 minutes until vegetables are tender. Mix egg into mixture.
