Apple Raisin Coffee Cake
Coffee Cake: 1 package white cake mix 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1 1/4 cups water 1/4 cup oil 2 eggs 1 1/2 cups apples -- peeled & diced 1/2 cup raisins
Topping: 1/2 cup flour 1/3 cup packed light brown sugar 1/4 cup butter 1 teaspoon cinnamon
Preheat oven to 350F. Lightly grease a 9x13 baking dish. Combine cake mix, cinnamon, and nutmeg in large bowl until well blended. Whisk in the water, oil, and eggs until mixture is smooth. Stir diced apples and raisins into cake batter. Pour into prepared baking dish. Combine all topping ingredients in small bowl with a pastry blender. Mixture should be the consistency of coarse crumbs. Sprinkle over cake batter. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on wire rack.
