Prime Rib with Mustard Sauce rec.food.cooking/Billy (brawny) (2000) Yield: 6 servings
6 lb standing rib roast garlic clove, minced 1 tsp salt 1 tsp paprika 1/2 cup mayonnaise 1/4 cup Dijon mustard 1/4 cup horseradish, prepared
Heat oven to 475F
Rub meat with garlic and sprinkle with salt and paprika. Place meat in uncovered roasting pan, fat side up. Cook 30 minutes until browned.
Reduce temperature to 325F and cook until meat is tender, allowing 30 minutes per pound for medium-well and 18 minutes per pound for rare meat.
Meanwhile, in small bowl combine mayonnaise, mustard and horseradish; mix well. Serve with meat.
