Ripe Banana Custard (Flan) servings: 8-10
Caramel: 1 cup sugar
Custard (Flan): 3 ripe bananas 1 can condensed milk 1 can evaporated milk 4 big eggs 8 ounces light cream cheese 1 tsp vanilla
Preheat the oven to 350 F. Use a round baking pan (9x11. Cover the pan with the caramel. For the caramel, heat the sugar over the stove in a pot, until it chages to an amber coloor,. Becareful that it does not burn, because it will aquire a sour taste. Cover the bottom & sides of the baking pan with the caramel. In a processor or cake mixer, mix all ingredients until cremy. Add into the baking pan. Put the pan into a bigger one with at least 1 inch of water (Bain du Marie). Bake for at least 60 minutes or until ready. Let it cool. Refrigerate until serving time. For serving. Onmold into a serving dish with the sugar Syrup (Caramel) over & around. Garnish with Cherries or strawberries & whipped cream.
