Orange Cookies with Orange Icing rec.food.cooking/Nancy Dooley (1995) Makes about 30 cookies
1 1/3 cups all-purpose flour 1/2 tsp. baking powder 1/4 tsp. baking soda 1/2 cup sugar 3 Tbsp. shortening 3 Tbsp. butter 1 egg 1/3 cup buttermilk 1 tsp. finely shredded orange peel 2 Tbsp. orange juice Orange icing
Stir together the flour, baking powder and baking soda. Set aside.
Beat together sugar, shortening and butter. Add egg; beat until fluffy. Beat in buttermilk, peel and orange juice. Add dry ingredients; beat until combined.
Drop by teaspoonful onto ungreased cookie sheets; bake in 350F oven 10 minutes.
Remove; cool on racks. Prepare orange icing and frost cookies.
Orange Icing: Beat together 2 cups sifted powdered sugar, 2 tsp. finely shredded orange peel and 2 to 3 Tbsp. orange juice to make a spreadable, thick frosting.
