Buffalo Chicken Sandwiches
4 boneless, skinless chicken breasts 1/2 cup blue cheese dressing 1/4 cup flour 1/4 cup butter, melted 1 tablespon hot pepper sauce or more lettuce leaves 4 sandwich rolls, split
Pound chicken to flatten slightly. Coat chicken with salad dressing, dip in flour. In a large skillet, melt butter over medium heat. Add chicken. Saute 10 minutes, turning once. Remove from heat. Remove chicken, set aside. Add pepper sauce to butter left in skillet and heat over medium heat. Add chicken, turn to coat. Cook chicken an additional 1 to 2 minutes.
Serve on toasted buns with lettuce, top with more blue cheese dressing. |
