COFFEE POT ROAST
1 (2 to 3 lb.) pot roast 4 carrots, peeled and diced 2 cups potatoes, peeled and diced 1 cup canned diced tomatoes 1 cup brewed black coffee 1 cup water
Place diced vegetables in crockpot. Add beef. Add all other ingredients including salt and pepper to taste.
Cover; cook on Low 8-10 hours.
