Georgetown Lime Cookies Source: Helen Jolly Makes 5 dozen cookies
2 cups flour 1 tsp baking powder 1/4 tsp salt 1/4 tsp nutmeg 1/4 tsp cinnamon 3/4 cup butter; softened 1 cup sugar 2 limes zest 3 tbsp fresh lime juice
DUSTING SUGAR: 1/3 cup granulated sugar 1/4 tsp nutmeg 1/4 tsp cinnamon
Preheat oven to 350 degrees.
Combine flour, baking powder, salt, nutmeg and cinnamon, set aside.
Beat together butter, sugar and lime zest until fluffy. Gradually add lime juice. Stir in flour, gradually, blending well after each addition.
For Dusting Sugar, mix sugar, cinnamon and nutmeg in a small bowl.
Roll rounded teaspoonfuls of dough into 1-inch balls, and roll each in the sugar mixture. Arrange 1-inch apart on greased baking sheets. Use a decorative cookie stamp or bottom of a glass to flatten balls slightly.
Bake 13 to 16 minutes, or until deep golden brown on the bottom.
