Lime Rice Pilaf
2 Tbsp. butter 1 small onion, chopped finely 2 cups long grain white rice 3 3/4 cup veg. or chicken stock 1/4 cup fresh lime juice 2 tsp. grated lime peel chopped fresh parsley or cilantro
Melt butter in large saucepan over med. heat. Add onion and saute until tender, about 10 min. Add rice & stir to coat. Add stock, lime juice & lime peel. Bring to a boil, reduce to a simmer, stir, cover & cook until rice is tender, about 20 min. Remove from heat and let stand 5 min. Season with salt & pepper. Transfer to a bowl & sprinkle with parsley or cilantro. |
