Undercover Fillets

Makes 4 servings

Need a dinner in a hurry? This recipe takes just 5 minutes to prepare and less then 10 to cook. Enjoy!

1 1/2 lbs. orange roughy, catfish, rockfish, snapper, or tilapia fillets, 1/2-inch thick
1 (8 oz.) carton low-fat plain yogurt
1/2 cup thinly sliced green onions or snipped chives.
salt and pepper

Place fish on a foil-lined and greased baking dish. Sprinkle fish lightly with salt and pepper. Broil 3 to 4 inches from heat or bake in a 500 degree oven for 4 to 6 minutes, or till fish just flakes when tested with a fork.

Meanwhile, combine yogurt and green onions or chives. Spoon over cooked fish. Broil or bake for 1 1/2 to 2 minutes more or till topping is heated through.

VARIATIONS:

Prepare as directed except omit green onion or chives and add one of these set of ingredients to the yogurt.

2 tablespoons snipped fresh herbs such as parsley, oregano, cilantro
OR: 1/2 tsp. curry powder
OR: 2 to 3 tablespoons coarse grain mustard
OR: 2 tablespoons finely chopped green and red sweet pepper and 2 tablespoons chopped plum tomatoes
