Eggs a la Pat
5 to 8 slices bacon, cut up and sauteed 6 medium onions, chopped 3 medium green peppers, chopped 1 pickled Jalapeno pepper, minced, reserve some juice 1 (No. 2) can tomatoes, reserve some liquid 1 lb. Americam cheese, cut up 2 Tbl. butter 1 dozen hard-boiled eggs, cut as desired
Saute bacon, then onions and green peppers. Add tomatoes. Simmer for 30 minutes. Stir in cheese until melted. Melt 2 Tbl. butter in casserole. Line casserole with eggs and cover with sauce. Bake at 350 degrees F until hot. Serves 10 to 12.
