This is from an elderly friend who had made this for her family for many years. Delicious and moist! We love it!
Carrot Cake
1 cup vegetable oil 2 cups sugar 4 eggs, beaten 2 cups flour 1/2 teaspoon baking powder 1/2 teaspoon salt 2 teaspoons baking soda 1 cup walnuts, chopped 1 14 oz.can crushed pineapple, drained 2 cups carrots, grated
In a large bowl, mix oil & sugar, add beaten eggs & blend well. Add pineapple & carrots & mix well. In another bowl, mix dry ingredients together. Add the two together. Mix in the walnuts. Bake in a greased 9x13 pan at 325 for 1 hour. Use a cream cheese icing to frost.
