My sister gave me this recipe. Very Good!
Cashew Curry
1 medium onion chopped 2 cloves garlic, chopped 2 tablespoons butter 1 1/2 pounds pork or lamb, cut in small cubes 1 1/2 teaspoons curry powder 1 tablespoon flour 1/8 teaspoon cayenne 1 1/2 cups milk 1/2 teaspoon salt 1/2 cup cashews, whole or pieces 2 medium tomatoes, chopped
Saute onion and garlic in butter, add meat and brown. Blend in curry powder and flour, stirring constantly. Add milk and whisk until smooth. Add seasonings. Cook, stirring constantly, over medium heat until thickened. Add cashews and tomatoes. Heat an additional 10 minutes or until meat is tender.
