Chewy Apple-Berry Oatmeal Cookies Makes about 4 1/2 dozen
1 cup (2 sticks) 70% vegetable oil spread, softened 1 cup firmly packed brown sugar 1/2 cup granulated sugar 2 eggs 1 tsp. vanilla 1 3/4 cups all-purpose flour 1 1/2 tsp. ground ginger or cinnamon 1 tsp. baking soda 1/2 tsp. salt 3 cups quick or old-fashioned oats 1 cup finely chopped Jonagold apples 2/3 cup dried cranberries
Heat oven to 375 degrees. Beat vegetable spread and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, ginger, baking soda and salt; mix well. Stir in oats, apple and dried cranberries.
Drop dough by rounded measuring tablespoonfuls, about 2 inches apart, onto ungreased cookie sheets. Bake 11 to 13 minutes or until golden brown. (Centers will be soft.) Cool 2 minutes on cookie sheets; remove to wire racks. Cool completely. Store tightly covered.
NOTE: If using old-fashioned oats, increase the flour to 2 cups.
