Rigatoni with Four Cheeses Source: 365 Ways to Cook Pasta Servings: 4
1/4 cup butter 1 clove garlic -- crushed 1 pound ricotta cheese 1/4 cup Parmesan cheese 2 tablespoons Romano cheese 3 tablespoons parsley -- chopped 3 teaspoons basil 1/4 teaspoon ground nutmeg 1 dash ground cloves 1 pound rigatoni 1 cup mozzarella cheese -- shredded
Heat butter in a medium skillet, add garlic and sauté 1 minute. Stir in ricotta, Parmesan, Romano, parsley, basil, nutmeg and cloves. Cook, stirring over low heat, until heated through.
Cook rigatoni according to package directions until al dente. Drain place in a large serving bowl.
Combine rigatoni and ricotta mixture and add the mozzarella. Gently stir to combine and serve.
